No added sugar treat
Chocolate Protein Balls

Ingredients:

  • 1 cup Medjool dates, pitted and chopped

  • ½ cup natural almond butter or peanut butter

  • ½ cup unsweetened cacao powder (or cocoa powder)

  • 1 pinch sea salt or pink Himalayan salt

  • Optional coatings: finely chopped nuts, chopped goji berries, shredded coconut, or extra cacao powder


Instructions:

  1. Prepare the dates: If your dates are a little dry, soak them in warm water for 5–10 minutes, then drain and pat dry. This helps them blend more easily.

  2. Blend the base: In a food processor, combine the dates and nut butter. Pulse until a thick paste forms.

  3. Add the cacao: Add cacao powder and a pinch of salt. Blend again until fully incorporated. The mixture should resemble a soft, sticky dough.

  4. Shape into bites: Scoop out about a tablespoon of the mixture and roll into balls using your hands.

  5. Coat (optional): Roll each ball in your choice of chopped nuts, goji berries, shredded coconut, or cacao powder for added texture and flavor.

  6. Chill or freeze: Place the energy bites in small paper cases or an airtight container. Chill in the fridge for at least 30 minutes to firm up, or freeze for longer storage.

Storage:

  • Fridge: Up to 1 week

  • Freezer: Up to 3 months (just let them thaw a few minutes before eating)
