  • Pre-cooked new potatoes, halved or quartered

  • Cooked or ready-to-eat beetroot, sliced

  • Radishes, thinly sliced (about five)

  • Pea shoots or rocket leaves (half a bag)

  • Smoked or tinned mackerel (your choice)

  • Fresh dill and mint (optional)


Quick Dressing

  • Juice of half a lemon

  • 1 tablespoon olive oil

  • 1 teaspoon yoghurt

  • 1 teaspoon mayonnaise

  • Wholegrain brown rice

  2. Stir in miso paste and chilli powder.

  3. Add passata and let the mixture simmer gently for about an hour.

  4. In the last 20 minutes, add the smoky black beans and crumble in the dark chocolate.

  5. Cook brown rice separately according to package instructions.

  6. Serve the chilli over brown rice, topped with a spoonful of cottage cheese and fresh chives if desired.


This meal takes longer to simmer but requires minimal active cooking time. The chocolate enhances the chilli’s flavour without overpowering it.


Healthy Tuna Pasta
